Almonds (whether eaten alone, or in an almond dessert) and dessert wines are to die for.
You can’t go wrong with Almonds and sherry, particularly a Manzanilla or Fino Sherry, as these types of sherry have a nutty quality to them. On a similar note, my favourite treat around Christmas time is chocolate covered almonds and a 20 year tawny port.
Almond Biscotti and Vin Santo Pairing
If you are a lover of almond biscotti, your life will change if you dip this dessert into a glass of Italian Vin Santo. The intense sweetness of the wine is softened by the dryness of the cookie (and the cookie is physically softened) making for an exceptional pairing! These two foods were meant for one another and are considered one of the rare holy grails of food and wine pairing.
Sparkling Wine and Almond Pairing
Sparkling wines, particularly Prosecco, and almonds is another fine match. The sparkling wine brings out a lot of pleasant flavours in Almonds, particularly if they are unsalted. Most of the time you won’t have almonds on their own, but hey’ll be in a fruit cake, or with dried fruit, or accompanying a cheese tray, again with figs, and dried fruit. Hence sherry and sparkling wine are safe bets.
